Topo map love cake

My official opening ceremony for my new electric mixer was actually last Friday. However, my baking was failed, as I used a small pan and caused the batter to overflow inside the oven. I tried again yesterday.
Since I only have a 7x4 inch pan, I modified the original recipe by reducing the measurement of all  ingredients. The ingredients are 200gm butter 200gm sugar 4 medium eggs 240gm cake flour +1 tsp baking powder 100ml evaporated milk 1 tsp vanilla extract 1 tsp pandan paste and 3Tbsp Cocoa powder for creating the topo lines.
I have saved so much time by having this handsome mixer, grrr.....grrr....grrr. 
Cream butter and sugar until pale and fluffy by using speed number 4 for about 10 minutes.
Add in eggs, one by one, beating well after each addition.
Sift half the flour into the butter mixture and beat on speed number 1 until well combined.
Mix in the evaporated milk until well combined.
Sift the balance of flour into the mixture and beat on speed number 1 until combined.
Divide the batter to two. Mix vanilla extract to one part and pandan paste to the other.
Preheat oven to 180C.
Spread 1/2 the pandan batter into pan. 
Evenly sift a thin layer of cocoa powder over.
Gently dollop half of the other colour over and gently level it. Repeat the sifting of cocoa powder.
Repeat layering with both colours, with the final layer clean without cocoa powder on top.
Bake for 45 minutes or until toothpick comes out clean. 
Until here, do you notice the batter rise up so nice in my new oven? 
My husband got me a new oven on only the next day that he got me the new electric mixer.
My poor halogen oven is now resting inside my kitchen cabinet. Don't know when I can make use of it again.
Though the Topo map lines were still not really nice, I will still keep up practicing till I get the perfect one.

Topo map love cake has all the ingredients to make the cake tastes heavenly.

  4. at first i thought what a topo map love cake is?? the name sounds so funny.. it looks like those marble cake to me, but it's green instead of chocolate, hehe~~

    2. the cake looks nice woh, and also seems to be very moisture.. i like cake that is moisture and wet enough, don't like those dry dry one.. if too dry easily ahem ahem one!! :p

    2. Halogen oven is perfect for baking CNY cookies! Normal conventional ovens will waste electricity to bake cookies. I even ordered a baking set just for cup cakes! 4 mins baking only.

  8. I got a suggestions to make the cake firmer. Try to chill one color mix in the fridge before baking. You will see the difference when baked.

  15. I love the pattern on the cake. I must give this a try. I have a halogen oven too, which I use to grill chicken drummettes or make siew yoke (roast pork). But I suspect it will be easier for you to buy siew yoke than make your own.
